Wine Cap Mushrooms

This edible garden wonder is an easy-to-care-for fungus that will keep giving for as long as you keep laying down straw and other mulches. Since you'll be mulching your garden anyway, why not grow mushrooms from that space, too?

Also known as King Stropharia or Garden Giant, Wine Cap mushrooms are commonly consumed when the caps are young and display their deep, red wine hues. If left to mature, these mushrooms can grow rather large and weigh up to five pounds! They are also quite nutritious, containing fiber, vitamin D, amino acids, protein, iron, copper, and some calcium.

Wine Caps can help enrich your soil by breaking down materials into elements your plants can use. The mycelium also retains water better than the mulch by itself.

The Wine Caps in the photo are ones I grew myself in a tall lasagna-style bed of straw, hardwood pellets (like for smokers), and the grain spawn innoculant. I can expect shrooms all fall long and then next spring, too!
